Pimento Mac & Cheese

How much cheese is too much? *the limit does not exist* 

It’s the return of the pimento mac (+ cheese) just in time for the 4th next week! Topped with ritz cracker breadcrumbs and a heavy drizzle of Mike’s hot honey, this is the *perfect* dish to bring to your July 4th party!!

PIMENTO MAC AND CHEESE WITH A RITZ CRACKER BREADCRUMB AND MIKE’S HOT HONEY DRIZZLE

Ingreduents: 

-A sleeve of Ritz crackers 

-Drizzle of Mike’s hot honey 

-1/2 stick of butter

-2 TB of all-purpose flour

-1 cup of whole milk

-2 cups of heavy cream

-2 cups of freshly shredded sharp cheddar

-1 cup of pimento cheese

-1 box of Cavatappi pasta 

Mash Ritz crackers and toast over medium low heat. Drizzle Mike’s hot honey and toss. Set aside. 

Melt butter over medium low heat. Add flour and whisk to make a roux. Add milk and heavy cream and bring to a simmer. Add cheddar cheese and pimento cheese and mix. Let simmer until pasta finishes cooking. Season with salt + freshly cracked pepper. 

Bring a pot of water to boil. Cook pasta al dente and transfer directly to sauce. 

Top with Ritz breadcrumbs and a heavy drizzle of Mike’s hot honey. Serve & enjoy!!!!
